Maple Cinnamon Roasted Sweet Potatoes

These are not the sticky sweet marshmallow sweet potatoes of the 20th century. This is a 21st century dish. Buttery sweet potatoes with pure maple syrup, cinnamon and a dash of sea salt means you can save the marshmallows for the hot cocoa.

  1. Preheat oven to 400ºF. Place 1 lb peeled, diced sweet potato in greased 9×13-in pan, cover with foil and bake 15 mins.
  2. Remove foil. Stir in 3 discs of butter and return to oven for 10 to 15 min. Toss with 1 to 2 more discs of butter. Enjoy!
