Tuscany Pasta

Throughout the year we depend upon sun-dried tomatoes to transport us to tomato season and the dog days of summer. It might be just a bowl of pasta or it might be our winter sanity. Either way we’re stock piling different “pastas” – whole wheat, zucchini noodles, gluten free, stuffed raviolis and more so we never miss out on a weeknight bowl of goodness.

INSTRUCTIONS
SERVES 2-4
  1. Cook 8 oz of dry pasta to al dente. While still hot, toss with 6 to 8 discs of Vegan Blend and enjoy!
  2. Garnish with roasted cherry tomatoes and fresh basil leaves, if desired.
OTHER RECIPE IDEAS
  • Perfect as a pizza sauce or simply slathered on the crusts – flour-based, cauliflower or gluten-free varieties.
  • Lightly fry smashed, cooked chickpeas in melted Sun-Dried Tomato Blend for a crunchy, hearty side or salad topping.
  • Stir in to hot grain or riced veggie bowls.
