Throughout the year we depend upon sun-dried tomatoes to transport us to tomato season and the dog days of summer. It might be just a bowl of pasta or it might be our winter sanity. Either way we’re stock piling different “pastas” – whole wheat, zucchini noodles, gluten free, stuffed raviolis and more so we never miss out on a weeknight bowl of goodness.
Cook 8 oz of dry pasta to al dente. While still hot, toss with 6 to 8 discs of Vegan Blend and enjoy!
Garnish with roasted cherry tomatoes and fresh basil leaves, if desired.
